I recently walked in to my LFS and they were having a great sale on these guys...so I bought 2 at about an inch and a half.

The LFS was closing at the time, So I wasn't able to ask too many questions...

The LFS owner said they'll eat anything... But do they have a preference?

Any help would be appreciated!

Tried the search but didnt get much info

Think of Channel Cats as a 3 foot, coldwater, non stop eating, in your face, great tasting, monster tank requirement fish.

they eat anything that is on the bottom, from pellets to and fresh food like strips of tilapia, market shrimp, etc.

Yeah they will...and I don't even think they will limit it to stuff on the bottom. :D

A buddy of mine had a channel cat that would motor back and forth at the surface of the water just gulping up any pellets that his other guys didn't get.

and grow they will....VERY VERY quickly. Theres a 45 lb one at the bass pro shop near me. For all I know you have a 10,000 gal pond waiting for them but just a warning :)
