I have heard chocolates are a PITA to breed due to their sensitivity (well, more so than other gouramis). Look up articles on breeding Bettas, it's the exact same method. I have used a modified version of this to breed different color variations of trichogaster trichopterus and Colisa lalia that is around $75 to set-up (but a little work from the start) and will last you quite a while. PM me if you want specifics and I will be glad to share.
I have never bred Rams, but doesn't seem like it would be too far off from other dwarves (like apistos). I'm sure someone else will step in here soon.
