Frozen bloodworms, mussel, blackworms...live foods are preferred though. They'll eat mealworms and crickets. A lot of people feed theirs crickets, but I've heard that you shouldn't.
They're carnivores, so anything small that crawls or swims will be eaten.

What kind of mudskipper (origin or scientific name) and what size tank is it going into? Land platform? I ask because some things like crickets can rot or clog a filter before being eaten by a mudskipper if the water is too high/fast moving/feeding too much etc...

I agree with the bloodworms/blackworms. Mine would eat them until they pop if I let them. Usually live foods I try and keep for a weekly treat. I'm no expert though, by any means. Post pics when you have them!

I would feed mine frozen bloodworms, NLS pellets, frozen krill, and occasional leftover shrimp from fishing. (don't have it anymore, had it for approx. 4 years)

Suprizingly, my friends skipper only kills guppies, not eating any of them. :(

Mine eats most frozen foods and hikari and sera pellets. Not too keen on other pellet foods. Also takes live mollies when I get them (I put in half a dozen every few months as a treat and they generally last about a week or two)

mine ate a pretty large halfbeak once, so they definitely are more than willing to eat small fish, but I wouldn't offer them too often if only to keep them from refusing pellets and other foods
