Question about cycling large tank

Just do old media, and whatever fish you really want to have in the tank if you have old media.

Agreed. Even if the tank is larger methods should be the same.

Was thinking id add the old media with the goldfish and run it for a week keeping an eye on my levels then add fish a week apart starting with my least favorite in case something happens.

If you monitor parameters and wait until cycling is complete (the correct way to cycle) you don't need to worry about anything happening. Cycling with seeded media should not take too long. Let you parameters dictate when the cycle is complete, not guess work or torturing fish with ammonia.
