Seriously, I guess I'd fillet it, slice the fillets into 1lb or 1/2lb pieces and skin them individually or skin them in larger pieces and cut them down smaller afterwards. I don't really think they are a popular food fish though
Most species of cornets and trumpets are actually a pretty common catch. They are caught on damashis(jigging shrimp flies), shorecasting with small lures like curly tail grubs. You even nail them livebaiting smaller fish. They are a pretty aggressive ambush predator divemaster99
