Get him a Florida Gar (Often wrongly called Alligator By the way).. Expect in time though you will need to up the tank to a 120.. If he is really into a Gar than that is just awesome and should be nurtured.

Live fish has a huge Nutritional advantage.. Key is as to where they come from and if they themselves are healthy and well fed. Whole frozen fish can substitute and is preferred. Earthworms are useless unless carefully gut loaded.

They are not both FLG.. You have one FLG and a Shortnosed.. So yes you have different species..

There is one protocol that works 100% of the time. want to fumble around experimenting have fun with and enjoy that. Nothing wrong with it but some of us have done the hard work for you already and it is a standardized method that will be successful. It works and is consistent as far as outcome...

Gar are not at all slow growers.. They get big quick if properly cared for. That said a FLG will do good in a 180 for some time. It should reach about 12 to 14 inches its first year then slow a bit to 1 inch a year (Or less). Some will stay smaller but this depends on feed intake and the care...
