Well, my dad got me 2 "surprises" for my auratus tank, 2 bicolour peacocks. Needless to say, within 2 hours the auratus killed one of the peacocks, and the other one was badly nipped, and I saved him by throwing him in my 120, the water in the two tanks is the same (the 120 is probably cleaner)...

Right now I have a 120 gallon (5'x18"), 2 aquaclear 110s on it, and the following: Common Pleco 5 Silver dollars Green Severum I was hoping I could add some bichirs, perhaps an ornate and a delhezi? Thoughts? Could I do one of each or would I be overstocking? If not, any ideas of other oddballs...

it's for weight distribution, my tanks stands are always on carpet floors which have done it for me. If I were to move my 120 somewhere on hardwood I can imagine I'd put some kind of foam down.

Would an ornate bichir work, or would it eat my silver dollars?

I'm fortunate enough not to see many common plecos, RTCs, etc out en masse in pet stores, but boy do I see a lot of "silver sharks" (Pangasius) around here.

Pics below, they're in my 55, I know they're supposed to grow from 4-5", but frankly I don't really know how big that is, I have trouble with size, considering they're in the tank and all. My question is, do the bigger ones look like mature fish, or do they still have some good growing to do...

Ever get that dreadful feeling that somewhere they're making short balloon bodied albino veiltail oscars? I'm sure there's got to be a few out there somewhere...

Also check your region, if there's spraying for bugs or other invasives in your area you don't want that in your tank either.

A jewel in with an oscar..? The platy and guppy were destined for death, and an oscar will kill pretty much everything you've mentioned, except maybe the firemouth if they're in a suitably sized tank.

If you're lazy like I am, understock and use lots and lots of live plants to minimize water changes. All in all though, you have to top off evaporation anyways.

What's available to you? If you could get something like a keyhole cichlid or other small placid cichlid I can imagine it would work nicely.

After a while, it's not hard to figure certain information when you're in the hobby "is fish x aggressive, minimum tank size formula, etc". Judging by your DP, I take it you keep fish of your own, so stay active and keep keeping them and you'll pick up stuff on the way :)
