it just seems weird to not have any changes for an entire week.

I'm currently having the same problem in my 5 gallon tank. All readings are good except the following: Nitrites at 3.0 and Nitrates at 40 and Ammonia at 0. Am I doing to many water changes? What's my deal?

The last time I cycled my tank, it took over 14 days to get rid of Nitrites. You can raise the temp to mid 80's and add more aeration. I recommend adding Salt or Prime if you are using live fish for cycling.

Don't do water changes during your cycle.
