You would need a 125g or 150g tank to start. That will last you 2-3 years, depending on gar species (I'm assuming Florida gar). Above that, for life, either a 220g or 265g, because they need a big footprint. 5x2x2 is good, 5x2.5x2 would be better, 5x3x2 is best (middle number meaning front to back depth).
IF you've never kept gar before, start with a Florida gar. Easy to keep, don't get too large, and are fairly docile. Expect about 12" in the first year, and then slowing down after that. Once they hit about 17-18", you'll need to upgrade from a 125/150g to something like a 220/265g tank. Or you can set them up in one of those rubbermaid tubs. They work well as small ponds, indoors or outdoors.
