Do stingrays shed there mucus lining, or does my ray have a fungal infection? looks like some long stringies of different parts of the body, she refused food today but remains very active as in only really settles to the bottom very briefly, before taking off to play in the current.

Doesn't sound good. Check water before changes so you know where it sits. Then change water and hope for the best.

ammonia/nitrite will stress fish out and cause that to happen, I don't know specifically with rays but other fish that are scaleless and scaled tend to do that.

aquarium salt or sea salt (without anti-caking) from the grocery store will minimize the toxicity of nitrite poisoning and help gill function if it is indeed a spike.
