Just thought it would be interesting to see what some, in their experience, have learned to be some very fast growing fish. I do realize some depend on your feeding habits, water change and other factors, however we are just talking in general. Why don't we go with your top five and feel free to post before and after pics if you wish. Ill start it off with my top 5 in my experience:

1. Oscar
2. Common pleco
3. Red Devil/midas
4. Red tail catfish
5. Flowerhorn

My Ki Ogon Butterfly Koi went from a 3-4 inch fish to a 18.5 inch monster in 13 months! Fastest growth rate I have seen. A close second is my Common Pleco, went from 4 inches to a little over a foot in the same time frame as the Koi.

Most any fish will grow quick with low nitrates NO ammonia/nitrite a healthy varied diet and enough space! And of course stable temp and ph!

My red belly piranhas grew fast, faster then any other tropical fish. 5-6.5" in 1 year and going strong!

Just keep water fresh; 2x 20-30% wc/week given bio load
