Vary it as much as you can, I feed a lot of fresh stuff like fish and shrimp, be carful with the massivore because it will eat loads and then the pellets swell up in its belly and another little secret I learned is every now n then I stuff a few silversides with some mild paprika and it brings the red out beautifully

IMHO, perhaps 6-8 months. That's because I follow the 4xL by 2xL minimal footprint rule. It grows as fast as RTC in adequate keeping: ~1.5'-2' in the first year, 2.5'-3' in the second year, ~4'-5' in many years.
One cannot stop the practice of selling these cats to unprepared/uninformed customers by buying them. If anything, it most obviously encourages (more) sales. It may be better to buy with the aim of having it as a pet... for great many years, like 30 years... and having a viable plan as this is often an enormous financial committment.
These guys are unfussy eaters, RTC-like too. Fleshy foods, dry foods are accepted easily or with a little fast.

At 4" the goldfish would need an 8" wide tank. When it grows up to ~1', it will need a 2' tank. All of this is just my opinion, my friend. No one has to like it or follow it. The OP asked for opinions, my understanding is. So, I dared to provide mine

Yeah everyone says these grow so fast but 8" in 9 months is not that bad.
The one I had was about 7-9" and it was a year old. I didn't power feed it but he ate plenty
