Hi there! I'm looking at getting into a 180 gal plus set up and I'm finding lots of tanks that are for sale are salt water setups with dual overflows. Do these tanks work just as well as freshwater tanks or am I better to go with a tank that is not drilled and plumbed and that just runs off a FX5 rather than a sump? Thanks for your time and thoughts.

Works just as good. Just make sure everything used for the tank have dried that you plan on keeping. I would clean everything extremely well.

Very much south..
The above, and sumps are uncomparably better than cannisters....they give you many more filtration options.
Once you go sump there is no coming back.

The sump might be easier to maintain since you could do water changes thru the sump. The only tank I had with a sump was quite unless I moved the hoses or pump. I also use the return pump to pump water to my sink Thru the water changing hose.
