If I leave water unfiltered for 2 days but was filtered before that can I use it again ?

Water does not cycle. If you did not run the filters for 2 days you probably lost some of your bb and are no longer cycled for the same stocking level as before but there is nothing wrong with the wster unless there is fish in it. If there is fish in the water with no filtration there is going to be ammoniga and nitrites as opposed to only nitrates.
No there were no fish, it was half a 29 gallon so I added 14 gallons of new water then a 3" red terror
