When I painted the back of my tank (black) I painted it with "Plasti-dip" spray, which is $5 a can at home depot.

I used it because I had it laying around, its 100% removable and does not damage the tank in any way, easy to paint on, and dries in 10-30 minutes.

Most paints are not fish safe, so spray the OUTSIDE of the tank.

Personally I'd go with black for backgrounds
You can use kids acrylic paint on the back of your tank , use a foam roller to apply an even coat , recoat once dry to fill in any thin areas.
Really easy to remove it just peels off with a little help from a blade
