I currently run two FX5s on my 350g tank. The filters contain the foam spunges on the outer circle of the baskets and bio rings (only) in the center.

I want to increase my bio filtration so I'm adding a third FX5 with Pond Matrix in the center of the baskets.

Is it ok to remove the outer sponges and fill the outer circle of the baskets with Pond Matrix as well or should I only place it in the center?

Leave the outer sponges in place as they will trap any dirt and debris and lessen the chance of fouling your bio-media. The media trays work best for holding your media. Regular matrix may need mesh bags since it is smaller in size, I have used Pond matrix in an FX5 without issues.
