I've read that gars should be kept between 12-20 degrees celcius, that's obviously a lot lower than the average tropical tank, and many people have gars in tropical tanks.

My tanks are between 26-28 degrees C, which is about 79-83 degrees F.

Do gars do better in cooler water?

here they are kept at temp as high as 32 degrees and they do fine.

so far they are ok at temp around 30 degrees as from what i've seen so far.

well, i know that in the wild they're normally found in cooler waters than most tropical communities, but from what i've found with all the gars that i've ever had or known, they're pretty tolerant of warmer waters as well.

Some gars are found in tropical temperatures, primarily the tropical and Cuban gars. But I keep all of my gars at tropical temperatures, and they do great. I had my longnoses at around 65 degrees Fahrenheit for a while, and they did just as well in tropical temps.
