A protein skimmer removes dissolved solids (fish poop, food, ect )from saltwater. Basically like a filter

You pull more organics out of the water with wet. But you need to check sg more often and put more effort to maintaining the proper salinity.

Some guys skim wet and accomplish water changes in the process but as said above it doesn't work out so well with an auto topoff in use. I personally skim as dry as I can.

Protein skimming also works in fresh, it just takes more agitation at the air water interface to fractionate.
It happens naturally, whenever you see foam from wave action, or near water falls, that is fractionation.
I have used it for years on fresh water tanks, and in my ponds, and feel (when working properly) is one of the most effective filtration methods out there, as it takes waste out of the water column, as opposed to simply storing it.
