Is it better to get a bigger stingray rather then getting a
baby stingray. Would the bigger one live longer and won't
die fast like the babies ones

No, baby stingrays or pups can be plenty health and live long lives. Just get one from a good trusted source.

As didysis said, getting one from a good source is priority as young rays can be more delicate than older rays. Older rays are less likely to have issues eating too.
