Moontanman knows a good bit about them, you could try PMing him. I've never kept them. What I've gathered from other sources is:
growth rate- potentially quite fast. Have the final home ready to go before buying young fish.
temp- ambient. Probably best to stay below 80 or so- not that they can't survive at higher temps, but O2 goes down, metabolic activity (=appetite and consequent waste production) goes up, and infection becomes more likely.
pH- whatever.
food- green water, daphnia and other small live foods, various pellets. They are considered planktivores but can eat relatively large items.
Just remember, you need a huge tank or decent-sized pond. Nearly every paddlefish that I've seen in captivity has had contusions all over its bill and fins from bumping against glass or tank decor, and these fish were in gigantic public and commercial tanks. A pond is a better home, especially if well-seasoned and fertilized to encourage plankton growth.
Also be sure to check with state DNR for legality of keeping this fish in GA.
