At the moment the first chamber is stuffed with Fluval 204 foam, what should I replace this with? What density foam?

Also what would be the best way to add some polishing media? Filter floss? Which chamber etc?

Use filter socks for the first chamber, forget the foam.
 
There's not enough space to get filter socks underneath the inlet pipes, It's a 30g on a 90g tank....

In regards to additional polishing, I would cut out the baffles holding your filter floss in place and get some socks.

The water level in your sump looks pretty high. Be careful not to fill the tank so much that if the power goes off, it overwhelms your sump. Wet floors are never fun.
 
There's no filter floss only foam, but yeah I did consider that initially and may still go down the sock route but I find them a pain to clean and remove, a sponge I can just drop in a bucket, squaeeze and replace, I need to somehow cut the pipes and run 20mm flexible tubing making filter sock removal easy.

Water level is just right, the way I check is to fill tank up till about to flow down the main drain, then simply fill up the sump completely. Voila

This is a great setup and pretty much exactly what I'm looking to do. Water from the sump pumped up and overflows back down to sump so that a power failure doesn't change either water level. I am planning to do something cute with a 100 micron filter screen prefilter with the flow aimed up an inclined screen so that solids are immediately removed and roll down to a catching area for routine removal. I think fish-poo and any residual food being completely removed from the process will be better than a filter sock where they are able to break down and move past the filter. I'll post in this forum when it's built with pics.
