why are the plants so tasty?

Every time I have tried to keep potted plants for my tank, my fish nip at them and they eventually die. I know that a good live plant tank has numerous up-sides, but if the plants start to die slowly does it do harm to the water conditions? Should I take them out at the first sign of decay? Do I just give up?

Yep, rotting plants cause conditions to deteriorate. Remove dead plants.
