Are my fish going to still be healthy with a water change of 60-80% once per month?
 
Depends on your tank size and stock. Why not just do 25% or so a week?

Exactly! It all depends on stock and tank size. Aim for nitrates 40ppm or below.

25% a week is easy, even if you have a big tank it won't take that long.

Doing a 80% WC every 4 weeks is going to be a big change in water chemistry, I wouldn't do it honestly.
 
I wouldn't go a month between water changes. Why? Because the water chemistry in your tank will change over time as your buffering capacity is used up (your Kh). Regular water changes ensures your buffering capacity is replenished all the time. By going so long between water changes, you run the risk of sending your fish into osmotic shock due to potential differences in your tank's water and tap water. Just do small water changes every week.
 
Well I wouldn't do it. but depends on the size tank you are talking about and the tank inhabitants. I also don't treat my water so that sounds like death to my fish :P I typically don't go past 40 percent because I can never match the temp quite right and it really upsets the fish.
 
Ill stick to once a week than.
 
25% - 50% weekly will do nice for your stock. The key for water changes is to put a good system in place to do it easily. If it is a royal pain to do them, sooner or later, you'll start to take "holidays" and your stock will suffer.
