Breeding in a 40 gallon tank

I am planning on sometime in the future using my 40 gallon to breed fish. The dimensions are 30"Lx18"Hx15"W

I am looking for opinions of what anyone thinks would be a good pair for this sized tank. I want it to be reasonably easy but I don't want an empty looking tank as I suspect a pair of convicts might make.

Any comments would be greatly appreciated.

Neolamprologus brichardi. A small fairly common and easy to care for African cichlid that live and spawns in nuclear families. Other species of Neolamps and shelldwellers are also good options if you want to spawn something without restricing yourself to a single pair. If livebearers are your thing you could do a bunch of them in a heavily planted setup.
