are they all to be kept at high pH or can they slowly acclimate to lower or even slightly acidic pH levels?

Generally m.ellipsifer is known as the tanganyikan spiny eel although there are quite a number of others in the region.
Really they should be kept in hard alkaline water with a ph over 8. I would not expect them to fair well long term in soft or acidic water.
There are quite a number of other alternatives for those conditions although I admit, few so pretty.
