In tank humidity concerns

What is the concern of an excessive build up of humidity in an aquarium? This question is mainly for DIY builds, but I believe should be the same for all.

I see people putting ventalation on their tank builds, and I would like to know why? (not talking about lighting hoods here)

Humidity should only be a problem if there is something exposed in the tank that can rust or be consumed by mold, like exposed wood. If none of these are present, isn't it better to seal the tank as good as you can to trap the humidity so that it will mimimize water loss and heat/cooling loss and save on powering exhaust fans?

I always keep my tanks as sealed as possible and haven't had any problems, so I'm just curious about other peoples experiences.
