Out of curiousity, when sexing jags, are you able to go by how pointed they're dorsal and anal fins are like other cichlids, or are they an exception???

The markings on male Jags fins and tail are much darker and more distinct. Female's fin and tail markings are fainter....lighter, less defined. Females base coloration is more golden and they have splotches down the center of their body, but without the facial and body spots. Look at the male in your avatar and compare it to this wild caught female Jag from Lago Nicaragua.
Hope that I helped some? Once you get more experienced and have seen lots of Jags, it becomes much easier to sex them.
