For a 60 you'd want at least 4-5. They stay small and only eat algae, so they're great to have.
I usually make lists of possible fish and then go from there. There's a lot you can do for a 60.

Here's what I'd do:
6x one species of cory.
20x rummy nose tetras (shoal really well)
5x rainbows
1x smaller plec - clown, flash, bristlenose etc.
Imo, if you picked the rainbows right you could do a discus with the above stock.
I think personally you need a focal fish (usually a cichlid)...
IME mixed species of cories will not school. So your best off getting 6x sterbai, or 6x panda, etc.
