Ive been struggling to find decent info, if some one could point me in the right direction..... info on different species, size, temperament, and other general info... thanks for the help

all of the large gobies, Jade, Marble and Water cow goby all get to around 1'-2' in length, they are predators that will cohab nicely with other fish that are the same size or too large to fit in their mouths.
I have seen them kept with cichlids and with bichirs and other large predatory fish
 
While snorkeling Cenote Cristalino in Mexico, I watched a 10-12" goby stalk mollies and young Jack Dempseys. It would slowly enter a school, and strike. It was the only one I saw, among thousands on mollies, 100s of JDs and a few dozen catfish.
Here in Milwaukee, we have the Asian goby Neogobius melanstomus , it first invaded sometime in the 90s and has taken over almost the entire near shore habitat. Every boulder seems to be owned by a pair or dominant male.
I snorkel with them in summer when the temps climb into the 70sF, in winter the temps reach down into the high 30sF.
 
i thought that jade and watercows are not true gobies. they dont have the patented suction cup

Found both and do well in freshwater and brackish water
Temperament/behavior :Will eat anything big enough to fit in its mouth, although despite its size it does not have a large mouth. I found my 1' not being able to eat anything but a large molly. Not very aggressive with similar tank mates. Ive found them kept well with large south and central american cichlids. Might become territorial to other bottom dwellers and fight over caves and hiding spots. Unlike other gobies these do not have the ability to use their fins to "suction cup" unto surfaces. Also unlike some gobies , ive found this goby to be very active and can even be a wet pet. I was able to hand feed and pet mine.

Max tank size: 200+ i base this on the fact this fish is robust and at 1' can be 4" thick. Swimming baseball bats. They are clumsy and spook easy and will knock into everything. Ive never heard of one at 2' in captivity seems 18" was more the norm.

Sexing: males will have more color especially orange on cheeks and rays. Males will have a slender look to them. Females will be dull gray in color and darker body. Also will be rounder and fatter.
Breeding unknown (to me anyways)

Diet: this fish will eat to explode if allowed. Ive hear them often called garbage disposals. Do not let them eat themselves to oblivion. Like oscars they are messy eaters that dont know when to stop and they readily eat any from pellets to live to even flakes! They are very very messy fish so water maintenance is a must.

I kept mine in freshwater between 78-82

All this is based on personal experience. Other might disagree even google but its what i know from keeping this fish for years.
