So I had a nitrate spike I was just wondering if there are any suggestions on how frequently I can do water changes. I have already taken care of the cause of the spike and now just need to lower the level. Can I do 60% water changes every day or do i need to wait a few days between changes. Tank is a 75G with 8 inch Pleco 9 Inch Oscar and 3 small cichlid's

Yes you can do that. Just make sure you use a dechlorinator. I do an 80% change on my 125 once per week.

I don't see any problem with doing a 60, or even 80% water change on your aquarium, as long as you replace the lost water with a water conditioner.
Discus people frequently do daily 80-100% water changes on growout tanks. So, will be no problem.
How often where you doing water changes prior to the spike?... if the fish have gone monthes with only monthly water changes.. 80% daily might shock them.. and in that case I would reccomend spaceing it out to 50% every 3-4 days and working down over the next few weeks to every day if need be.
