Like everyone said, with age they will be thick as a can of pop. also I would get it on massivore to fatten them up.

Idealy you should remove the gravel entirely as Polypterus can swallow and choke on it.
When I did the swap in my tanks I moved my fish into 5 gallon buckets of tank water with air pumps temporarily so that I would not stress them out from the water clouding and removal of substrate.
I used cross stiching backing from walmart to scoop out the rocks as I could slide the backing underneath the gravel and the water would just filter out through the holes.
After removing the rocks I used a funnel made of a 2 foot length of 2" PVC piping with a 2-4" coupler on one end to place my sand(in my case Seachem Black Sand Flourite) on the bottom of the tank with minimal clouding. I should note during this process you should have your filtration turned off. Also, make sure you rinse your sand before adding it to the tank. I find the best way to do so is to take a pillow case, throw your sand in it and just let a hose run through it for about 5 minutes. This helps remove a lot of dust and silt and reduces clouding when adding the sand to your tank. Once the sand has all settled(usually an hour or two, longer if you got a LOT of clouding) just turn your filters back on and re-add your fish. It really is a pretty simple process and will make your fish much happier and your tank much prettier in the long run.

^ +1 a dark soft sand substrate is best w/ bichirs, they will be able to pass the sand but not gravel. I have mine half black sand and the other half your regular golden sand color. My Goldy and ornate usually hang out in the black. It'll make his colors come out more too

A friend of mine has endli, they have NEVER turned down sinking carnivore pellets (hikari) or I'd go for worms. Worms are probably the best live with the best nutrient profile. That's if he isn't on dead though, I'd go hikari sinkers

I started using X Treme recently. The nutritional value is great, and it is less then half the price of Massivore. Still, all fish, IME, love Massivore more then any other food.

Haven't tried massivore yet nor the carnivore sinking pellets...getting some soon

In my experience, tilapia has bulked up my bichirs more than massivores. In my opinion and experience, tilapia is the best food to beef up a bichir. It's good to feed both tilapia and massivores though.
