That tank is too small for a fire eel. The regularly reach 30"+ and it's not uncommon for them to get up to 40". A 125 is only 18" wide and 22ish" tall, which is definitely way too small. Here are quoted growth rates I have found on this and other fish keeping websites for properly fed & cared for fire eels in properly sized tanks:
-2 feet in 18 mos
-3 feet in 2 years
-8 to 30 in less than a year
I wouldn't put a fire eel in a tank as small as a 125 unless I already had a far larger tank available for it to go to in less than a year.

Check Craigslist often and hopefully something will pop up on there that you can use. Here in Ohio I see a few 10-12ft tanks pop up every now and then.
