Virile cray.
When you collect them do they have those hitchhikers on them like out here?

They look like little worms attached at one side. And even after a molt they still have them.

I love O. virilis, they are really great crayfish to keep. Very passive for a larger species, and they adopt interesting colorations in captivity for some reason (I suspect the pH, lighting and food) has something to do with it. They're one of my favorites to go crayfishing for out here lol.

What kind of trap are you using?
just a normal minnow trap with raw shrimp for bait

From the claws/arms, it looks like an O. virilis. Very interesting mottling to it, very awesome looking cray.

P.s. You're very lucky not to have annelids (what Horiyoshi III was talking about) on your crayfish... I get them on the ones I trap here. There don't do anything bad, but they creep me out so badly lol (that and I hate salt-bathing the crayfish to get rid of them) :p

I used to have a blue white and brown colored rusty crayfish which grew over 7 inches, I fed him deli chicken ,algae and flakes, I fed mine with a wooden kabob stick to keep the fish from getting it first(I've kept other crayfish but this one is my favorite)
