colour change

my pike has decided that he wants to be a different colour split in the middle of his head going down it seems his whole body. has anyone experienced this before. he is also not eating as strongly since I've noticed this. I checked my chemistry yesterday, everything is normal. 0,0,10 (nitrate)...
