So I have a new 120 Gallon (5') cycling and I'm anxiously awaiting adding some life to it. I have a Green Terror (male) and a couple Severums (assuming both female but young and hard to tell) in my grow out/quarantine tank. I'm planning on adding a Chocolate as soon as the cycle completes and I can clear out my grow out tank, but also had thoughts of a bichir or fire eel instead. I would also like to try some smaller non aggressives like rainbows or rummy nose, and also a nice little batch of Cories (won't add these if I go with the bichir). What would you all add to the Terror and Severums if you were stocking a new tank?

In a 5' 120, I think this depends on how aggressive your GT is. Some can be real mean, if you get a 10"+ bruiser he may decide he doesn't want to share the tank at all.
If he is on the peaceful side, I think you could get away with the GT, severums, chocolate, and some schooling fish. I would go for dennisoni barbs, or some of the taller species of tetras, the rummy's will eventually be bite-sized to the GT. With those four large cichlids, you are already at your stocking capacity bio-load wise in my opinion. Personally, I would leave the chocolate out and instead do a pair of smaller cichlids like guianacara, to add some size diversity and cut down on the bioload a bit.

My fingers are crossed on the GT's temper. He's still small at about 3 - 3.5 inches and has been living with a couple mollies since I got him with no issue. He flares at the severums to move them out of his corner when feeding but otherwise no issues yet. QT tank is just too small and need to get him into the larger tank soon.
I agree that if I got the Chocolate I wouldn't be adding much of anything else, and I prefer the aesthetics of having some smaller fish moving around . I'm not too familiar with Guianacara so thanks for the suggestion as that gives me something else to look into. The initial pics I've seen online look promising.

My old greenterror tried to eat a Cory at 8", his mouth got badly torn on its spines and the Cory died while in there. I had to remove the Cory, the terror died a few months later after me battling the infection in his wound...

Don't do cory with GT.

Any decent smallish catfish suggestions then? I'm not really fond of plecos.

Spotted pictus group will be active and pretty? Maybe blue Botia or clown loach if you want something similar to Cory behaviour?

The reason I was looking at Cories is that I wanted some action on the substrate while not growing to size of loaches. This may be something else I'll just have to leave out.

What about giant Cory if you can get them at a good size? Group of 3-5
