125 gallon tank build question

It'll be a lot cheaper to buy a 125. The reason we build plywood tanks is because we want huge monster tanks without paying 20k+

Just watch Craigslist for good deals on a 125.

Yep, cheaper to just buy it.
 
If you want to do it for practice, just to do it, to get something with unique dimensions, etc. building something that size be fine.

For something that's standard dimension, I think someone did the math and it needs to be over some minimum size (idk, iirc it was over 400 gallons) before it starts to make financial sense, and even that might assume you have certain skills or tools.
