I'm debating on doing all mechanical filtration in the fx5 then doing carbon and ceramic rings in the 110's? Would this keep me clean or should I set up the fx5 different?

55+ gallon sump all the way.

4 baffles - 3 to form a bubble barrier and 1 to isolate the pump return. Like this pic,

Since your doing freshwater, fill that middle chamber with as many bioballs as you can, wrapped in 2 cut sheet of eggcrate etc.

So in the end you have something that looks like this,

And you will be good to go. Sell you canisters and you will basically break even. Plus you can put your heaters, everything in the sump as well.

Yeah I've got a 210 and my sump is about 75 gallons. It has a pre filter area that is about 12x24" I use pond master fine media pad in it and it drips down to two huge cells of bio balls. Then it runs through a sponge for water polishing to two lifeguard aquatics 5000 pumps. Got two heaters in the sump under the bio balls. I've got plenty of turnover and the water is always crystal clear. I don't run carbon don't know why I just don't. But like the previous poster said go with a sump.
 
Just purchased a 180 with over flows, I plan on using a sump for the filtration on this unit to mainly increase the overall tank volume.
