So I have another 8x3x3 ready for stocking!.. and have no clue what to do! .. I thought about doing a huge small schooling tank. But I can see me getting bored of that.. my other idea was a tank of cichlids of different types.. maybe a ray tank but not sure what would be cool with them. Looking to throw ideas around with you guys

Bottom dweller: vulture catfish
Mid swimmers: peacock bass or large colourful cichlid(s) like a midas or red devil
Top to mid swimmers: 1 or two florida gars.
I usually like big tanks like yours be light on the stocking since they can get OVERSTOCKED very EASILY and very QUICKLY too.
However you could also do a central american community tank in which
