Just give your jar some time, hes not eatting and he gets freeaked out easily is because hes stil getting use to his new home. Jar will still get spooked once in a while even when they get big, my uncles 7 year old jar still does, not that often though. Did you cycle your tank before you add the jar in? if not that could also be the reason why your jar is so stressed and stuff. I suggest you buy a test kit and check your water.

Does not look as if you took proper steps in cycling your tank. Have you tested ammonia, nitrite and nitrate levels at all?
