55 gallon tank

I was thinking about adding a new fish to my 55 gallon, but I do not want to over stock it. I have a

6 Inch blue Gourami
A 6 inch Pinktail Chalceus
A 7 inch Peacock Eel
a 3 inch Albino Cory cat
A 5 inch common Pleco
A 5 inch Synodonits Multipunctactus

So could i add another fish or would that over stock
 
There is a lot of things to consider before anyone can really answer the question such as the size of the fish , if your filter will handle the bioload and on how often you do wc's this is a couple of them to consider.
 
None of the fish on your list are over messy however you still have a lot going on in there. With that many fish I would expect to be doing weekly water changes not biweekly. Are you keeping an eye on your water parameters? Regardless of how "clean" the water looks fish still have to do their business and that should help determine if you can add a fish or even maybe if its time to upgrade your tank or change your filter setup.
 
If you're water parameters are stable now I would say it would be fine considering the stock you already have now. What type of fish were you going to add if you don't mind me asking.
 
your tank is stocked now, I would say over stocked. you need more tank, not more fish. IMHO
