Picked up this guy like 5 years ago at a LFS labeled as a Burundi Frontosa. He looks like one but has 7 stripes instead of 6. Any ideas why this would be? All the fry he has produced have all had 6 stripes.

It's either a freak Burundi with the 7th stripe or it's a kigoma/Burundi hybrid, My guess is hybrid. It has 7 stripes like a kigoma but doesn't have the large dark cheek patch like a true kigoma.
Fisher pretty much hit the nail on the head. Most variants have oddballs like 7 stripes or badly mooned bars amongst other traits that are considered "undesirable". Hybrids are Always a possibility anymore due to aquarist that just don't care and fish farms that will do anything for a buck.
