What type of South and Central American cichlids should I get for my new 75 gallon aquarium?

I have a black belt in my 90 along with a salvini. A 90 is just a taller 75 really. You could a single of most vieja species or Midas,red devil, midevil solo tank would work as well

You could keep anything 1"-15" in size for life depending if you want tank mates.

My rule of thumb is 1" of adult cichlid species per 10 gals.
So in a 75 gal a few, maybe up to 5, not more than 7.5" cichlids is what I'd allow myself.
To me the ability to simply turn around without hitting the tank walls, is not sufficient.

a pair of nice top quality firemouths or a cuban as a wetpet in a biotope would do nicely?

you could get almost whatever u want in that tank. 75 is a nice tank. you could get any parachromis (with the exception of the dovii), green terror, Oscars, dempseys, texas,red devil, purple rose queen. you could get a Cuban, mayan,beani,red terror(tight squeeze but do-able),grammodes,istanlum . its endless ther are LOADS of awesome fish available for that tank.
