75 gallon stocking ideas. Is this over stocked?!?

No, but I feel like there is a chance the blood parrots get big enough to eat the gouramis down the road. You'd probably have a few years before they get that softball+ size though. If you're just worried about bioload and/or territory for the time being, you're fine. You could probably even add some small bottom dwellers if you wanted.

Can you recommend anything other than gouramis? Looking for some more color to the tank.

I would try them with either larger livebearers like mollies or swordtails, or larger tetras (serpae, Colombian, etc.).
Dwarf gouramis are really good at getting iridovirus and dying.

this is a bad idea, if you get all males
I agree with deadeye though, livebearers or taller bodied tetras that the blood parrots can't swallow
both parent species of blood parrots are known for hitting 14-16", I personally got a female BP to grow to 10" in a 55
 
It is not a bad idea, worked well for me and others.
It is not a good idea to keep 2 or three males and 2 or three females together.
But a larger number, same sex means no overly aggression.
It's a fact, you can't deny.
