2 filters is the better way to go if opt to go with canister filters. This was always my first choice of filters along with a hang on back for a 75 gallon. Your filter is where alot of your beneficial bacteria is stored and if you clean one filter at a time, there is alot less disrupted. Also if one of them brakes for any reason your not without any filtration.
A wet dry is another option. In my opinion it is more involved to setup because you pretty much design your own way to set it up and connect it to the tank. Pretty much there is no instruction booklet. You do what is best for your needs. This is what I would go with because you never move the filter to clean it. (BIGGG plus in my book. Moving large canister filters to and from the sink is a pain.) You can hide your heaters and such in there. These are super simple to maintain. Also if you decide down the road that you want a stronger, or not so strong pump ofcourse, you can simply get a new pump for the unit. Instead of replacing the whole filter like you would on a canister filter.

Definitely run two filters. In case one filter dies while your not around you got another filter full of bb cycling your water. Wet/drys aren't really nessecary for your tank. There usually more helpful on larger tanks.But if you want one for your 75 it's still good, tank size wont affect your wet/drys performance. For hob recommendations I would say aquaclear 110, by far the best hob ou can get for the money. Not to mention it's easy as hell to clean. For canister recommendations the best 2 brands IMO would be Eheim, and Fluval.
