Have bought a new 75G tank and I'm looking for stocking suggestions, preferably predatory fish. Don't want to keep small community fish or a large single wet pet.

Not going to be too many options for a predatory community in this size tank.
Ery Ery/ Red wolf fish is a very cool predator that can be kept comfortably in a 75 gallon for life. They get to around 8". Probably would have to be solo, though I have heard some people keep cichlids with them.
Some bichirs like the Senegal stay small enough to live in that tank, and you could have more than one in there
Exodon tetras are pretty cool piranha-like fish which you could keep a large school of. With plants, would be a really cool display.

Dwarf pikes might be a good option.

Lots of options as many medium predators good for a tank that size
Red wolf fish 20cm
Frogmouth catfish 22cm
Leopard bushfish 15cm
African butterfly fish 11cm
African knife fish 20cm
Upside down catfish 10cm
Featherfin catfish 20cm
Hoplo catfish 18cm
Rainbow snakehead (if legal) 20cm
Leporinus striatus (if kept in a group I've seen them first hand disembowel cichlids and other hardy fish) 15cm
Striped pike characin 25cm

What about severums, there are a lot of different options on color patterns and in my experience they are quite interactive my green severums eat out of my hand. That said they are some of my personal favorite fish. I have managed to keep mine with a few different fish over the years including a school of silver dollars, raphial catfish, pictus catfish, Senegal bichir. Bottom dwellers do well.
