Ok it's day 12 and my Ammonia is still hitting 1.0-2.5. I've been changing water daily for the past 5 days 20-40% each day. Then adding more salt, de-chlorinator with the good Bacteria. The one fish thats in there looks fine, I removed the 4 Koi 3 days ago in preperation for the new fish. The water is still looking a but cloudy, not nearly as back as before I started changing the water, but it's still not crystal clear. I've also added about 5 plants to help out. I thought the Ammonia cycle would only last 5-7 days? Not to mention I'm using old gravel, driftwood from an established tank. Should I be draining the water to 50% or more? Will this Ammonia level go down soon? Can I add fish during the Nitrate spike? As long as I do regular water changes? I sure hope this Ammonia goes away.
 
14 to 21 days in my experience till ammonia drops off completely. Are you seeing any Nitrites at all? This is the spike you are talking about not Nitrate

Because nitrate-forming bacteria don't even begin to appear until nitrite is present in significant quantities, nitrite levels skyrocket (as the built-up ammonia is converted), continuing to rise as the continually-produced ammonia is converted to nitrite. Once the nitrate-forming bacteria take hold, nitrite levels fall, nitrate levels rise, and the tank is fully cycled."
