I am new in the field of Pikes and was wondering whats the best pike to get as in color and personality... or a 75g tank.

most of the saxatilis pikes are generally reasonably priced, nice looking, and remain small enough for a 75
I saw a full on red pike the other day... don't know what it was called but beautiful... you know much about them and how big they get?
Crenicichla johanna are awesome pikes, get colorful, and are pretty cheap depending on the locality. 
The red pike could be either Crenicichla sp. 'tapajos I', sp. 'tapajos II', or sp. 'atabapo I'. Those are the main three 'red' pikes available most commonly.
