Do wild species from rivers, lakes and such grow to accomidate the tank size like some have said about tropical fish? I never really learned that from my first bullhead "Grumpy" because I succesivly moved him from bigger to bigger tank till he was full sized?

No it is not true at all about any kind of fish. The only reason fish "seem" to grow to the size of their tank is due to stunting when their water is not kept clean due to high amounts of nitrates or being stuck in a 20 gallon.
Example, if you were to keep a fish that could grow to be 2' in a ten gallon tank and changed the water everyday it would keep growing until it either busts the tank or turns into a rectangle.
