It's the fumes, working with the Architeuthis remains would be equivalent to having your face in a bottle of ammonia for hours on end.

Slightly OT, but did they ever continue on that series on Discovery where some dude was going after Architeuthis spawnings? He was trying to bring some young ones back and grow them.
