I accidentally dropped my leds into my tank when I was trying to net a fish. They were on and their is no protection over the diodes. No glass/acrylic cover. Its only 2.5watts. Tank is a 3g. 1 guppy and a celestial pearl danio runt with a bent spine. Their doesn't appear to be any electricity in the water. Fish seem fine. However, its usb powered so its plugged into my computer. Which also doesn't seem to be damaged. The leds were like a buck or two but I'm more concerned about the fish. I have not physically stuck my hand in water.

Could 2.5 watts even do any damage in a tank?

That's like so little power, you could get that with a tiny hand crank device.

Once any source of electricity is removed from the tank there is no longer any danger to you or the fish. Something with that small amount of power may not have posed much of a threat but in general its a good idea to unplug electronics before moving them when around water
